  • 1 cup dried adzuki beans, soaked overnight and drained
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 2 fresh chilies (such as cayenne or serrano), chopped
  • 1 tablespoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (such as carrots, potatoes, and green beans), diced
  • 1 can coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Cook the Adzuki Beans

    • In a large saucepan, combine the soaked adzuki beans with enough water to cover them by about an inch.
    • Bring the mixture to a boil over high heat.
    • Reduce the heat to low and simmer for approximately 45-50 minutes or until the beans are tender. Drain and set aside.
  2. Prepare the Spice Blend

    • In a blender, combine cumin seeds, coriander seeds, cinnamon sticks, cardamom pods (with a few whole black peppercorns), and turmeric powder.
    • Grind them into a smooth powder using a spice grinder or mortar and pestle. Sift the resulting powder through a fine-mesh sieve to remove any lumps.
  3. Roast the Spice Blend

    • In a small pan over medium heat, dry roast the ground spice blend for about 2-3 minutes.
    • Remove from heat and allow it to cool completely.
  4. Cook the Onion and Ginger

    • Heat oil in a large saucepan or Dutch oven over low-medium heat.
    • Add chopped onions and sauté until they are translucent (about 8-10 minutes).
    • Add grated ginger, ground cumin, curry powder, turmeric powder, salt to taste, and the roasted spice blend. Cook for another minute.
  5. Add the Chilies and Garlic

    • Stir in chopped chilies and minced garlic.
    • Sauté for an additional 2-3 minutes or until fragrant.
  6. Combine with Coconut Milk and Vegetables

    • Add mixed vegetables, coconut milk, and cooked adzuki beans to the saucepan.
    • Simmer over medium heat for approximately 15-20 minutes or until the flavors have melded together and the desired consistency is reached.
  • Garnish with chopped cilantro before serving.
