Hearty Adzuki Bean Chili

The adzuki beans add a delicious texture and nutty flavor to the traditional chili mix of ground beef, onions, garlic, tomatoes, and spices. Ingredients:

  • 1 lb ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups adzuki beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced onions, and crushed tortilla chips

Instructions:

  1. Brown the ground beef in a large pot over medium-high heat until it is fully cooked.
  2. Drain excess fat from the meat and add the diced onion and minced garlic.
  3. Cook until the onion is translucent, about 5 minutes.
  4. Add chili powder, cumin, and cayenne pepper (if using) to the pot and stir for 1 minute.
  5. Stir in the adzuki beans, diced tomatoes, and beef broth.
  6. Reduce heat to low and let the chili simmer for at least 30 minutes or until it reaches your desired consistency.
  7. Season with salt and pepper to taste.
  8. Serve hot topped with your choice of optional toppings.

Note: You can also make this recipe in a slow cooker. Brown the ground beef and cook the onion mixture, then transfer everything to the slow cooker and add all other ingredients. Cook on low for 3-4 hours or until the chili reaches your desired consistency.
