Ingredients:
- 1 lb ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups adzuki beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper (optional)
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, diced onions, and crushed tortilla chips
Instructions:
- Brown the ground beef in a large pot over medium-high heat until it is fully cooked.
- Drain excess fat from the meat and add the diced onion and minced garlic.
- Cook until the onion is translucent, about 5 minutes.
- Add chili powder, cumin, and cayenne pepper (if using) to the pot and stir for 1 minute.
- Stir in the adzuki beans, diced tomatoes, and beef broth.
- Reduce heat to low and let the chili simmer for at least 30 minutes or until it reaches your desired consistency.
- Season with salt and pepper to taste.
- Serve hot topped with your choice of optional toppings.
Note: You can also make this recipe in a slow cooker. Brown the ground beef and cook the onion mixture, then transfer everything to the slow cooker and add all other ingredients. Cook on low for 3-4 hours or until the chili reaches your desired consistency.
