The Recipe: A Simple Guide to Making Homemade Orange Marmalade

To make a simple orange marmalade, you will need:

  • 4 large oranges
  • 2 cups of granulated sugar
  • 1 cup of water
  • A large saucepan with a heavy bottom (stainless steel or enameled cast iron)
  • A candy thermometer
  • Glass jars and lids for storing the marmalade

Step 1: Prepare the Oranges

Wash and peel the oranges using a vegetable peeler. Remove any white pith from the back of the peels and slice them thinly, trying to make uniform pieces.

Step 2: Make the Syrup

Combine the sugar and water in a saucepan and place it on medium heat until the sugar dissolves. Bring the mixture to a boil, then reduce the heat to a simmer and cook for about 10 minutes or until the syrup reaches 220°F (104°C) as measured by a candy thermometer.

Step 3: Add the Orange Peels

Once the syrup has reached the correct temperature, add the sliced orange peels to the saucepan. Continue cooking at a simmer for another 20-25 minutes, stirring occasionally, until the peels are translucent and the mixture has thickened.

Step 4: Check for Setpoint

To ensure that your marmalade is set properly, remove it from the heat and let it cool slightly. Then test its consistency by placing a small spoonful on a chilled plate or in an ice bath. If the mixture does not wrinkle when pushed with your finger, continue cooking it for shorter intervals until it reaches the correct thickness.

Step 5: Bottle and Store

Once the marmalade has reached your desired setpoint, remove the orange peels and let the mixture cool completely before pouring it into clean glass jars. Seal the jars with their lids and store them in a cool place or the refrigerator for longer storage. Homemade orange marmalade can keep for up to 6 months stored properly.

  • Adjust Sugar Content: The amount of sugar may be adjusted based on your preference, but keep in mind that using less sugar will result in a more tart marmalade.

  • Preserve in the Freezer: If you don't want your homemade orange marmalade at room temperature, consider freezing it. Just remember that when thawed, it might require a brief simmer to restore its desired consistency.
