Savory Stuffed Pork Chops and Apricots

Apricot Stuffing Delight

To start with, you'll need some ingredients to make the stuffed pork chops:

  • 4 boneless pork chops
  • 1 cup fresh apricots, diced
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon dried thyme
  • Salt and pepper to taste
  • 1 cup breadcrumbs

Next, prepare the stuffing mixture by combining the diced apricots, chopped onion, minced garlic, thyme, salt, and pepper in a bowl. Mix well until you get a smooth paste.

Now, it's time to stuff the pork chops. Lay the pork chops flat on a work surface and make a horizontal incision in each one to create a pocket for the stuffing. Be careful not to cut all the way through the meat. Stuff each chop with a quarter of the apricot mixture, then sprinkle some breadcrumbs over the top to help hold everything together.

Heat the olive oil in a skillet over medium-high heat and sear the stuffed pork chops until they're browned on both sides. Transfer them to a baking dish and finish cooking them in the oven at 375°F for about 20-25 minutes, or until cooked through.
