Homestyle Mashed Potato Cakes
These crispy, golden potato cakes are a comforting twist on traditional mashed potatoes. By adding some grated onion and a pinch of salt to the mix, they take on a savory flavor that complements a wide range of meals. They're perfect for a weeknight dinner or as a side dish for holiday gatherings.
A Twist on Classic Mashed Potatoes
Unlike traditional mashed potatoes, these potato cakes have a satisfying crunch from being pan-fried until golden brown. The addition of grated onion and a pinch of salt gives them a depth of flavor that's hard to resist. They're made with leftover mashed potatoes, so they're a great way to repurpose last night's dinner into something entirely new.
Ingredients
- 2 cups leftover mashed potatoes
- 1/4 cup all-purpose flour
- 1/4 cup grated onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter, melted
- 1 egg, lightly beaten
- Vegetable oil for frying
Instructions
Prepare the Potato Mixture
In a large bowl, combine the mashed potatoes, flour, grated onion, salt, and pepper. Stir in the melted butter and beaten egg until just combined. Be careful not to overmix.
Shape into Cakes
Using your hands or a spatula, shape the potato mixture into 4-6 patties depending on how large you want them to be.
Fry the Cakes
Heat about 1/2 inch of vegetable oil in a non-stick skillet over medium heat. When the oil is hot, add 2-3 potato cakes and cook until they're golden brown on both sides, about 4-5 minutes per side. Repeat with the remaining potato cakes.
Serve and Enjoy
Serve the homestyle mashed potato cakes hot with your favorite dinner or as a side dish for a special occasion. They're especially delicious topped with chives or scallions and served with a dollop of sour cream or applesauce.
