This recipe makes about 2 cups of marmalade, which should keep in the fridge for several months.

Ingredients:

  • 1 pound fresh ginger, peeled and grated
  • 4 cups water
  • 4 cups granulated sugar
  • 4 orange or lemon peels, sliced thinly

Instructions:

  1. In a large pot, combine the grated ginger and water.
  2. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the ginger is soft and the liquid has reduced slightly.
  3. Add the sugar and sliced citrus peels to the pot.
  4. Continue to cook the mixture over low heat, stirring occasionally, until it reaches the desired consistency. This should take about 30-40 minutes, depending on how thick you like your marmalade.
  5. Remove the pot from the heat and let the marmalade cool slightly before transferring it to a clean glass jar or container.
  6. Store the marmalade in the fridge for up to several months.
