Herb-Paired Grilled Endive Recipes

1. Lemon-Herb Grilled Endive with Feta

  • 4 endive heads
  • 2 lemons, juiced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup fresh parsley leaves
  • 1/4 cup crumbled feta cheese

Preheat grill to medium heat. Cut the endives in half lengthwise and brush with olive oil mixture of lemon juice and garlic. Grill for 5 minutes per side or until slightly charred. Top each endive with crumbled feta, fresh parsley leaves, and a drizzle of additional lemon juice.

2. Dill-Crusted Grilled Endive with Lemon Aioli

  • 4 endive heads
  • 1 cup dill weed
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 lemons, juiced
  • 3 garlic cloves, minced
  • 1 egg yolk

Combine dill weed and Parmesan cheese in a bowl. In a separate bowl mix together lemon juice, garlic, and olive oil to create the aioli mixture. Brush endive with aioli mixture, then roll it in the dill-crusted mixtures before grilling for 5 minutes per side or until slightly charred.

3. Garlic-Parsley Grilled Endive Salad

  • 4 endive heads
  • 1/2 cup fresh parsley leaves
  • 3 garlic cloves, minced
  • 1 lemon juiced
  • 2 tbsp olive oil

Preheat grill to medium heat and brush endives with mixture of olive oil, garlic, and lemon juice. Grill for 5 minutes per side or until slightly charred. Top each endive with fresh parsley leaves and a drizzle of additional lemon juice.
