Chives are a low-maintenance, perennial herb that adds a delicate onion flavor to various dishes. They require minimal care and can be harvested throughout the growing season with the right techniques.
Choosing the Right Time to Harvest
The ideal time to harvest chives is when the leaves are young and tender. This usually occurs in the spring or early summer, after the plant has emerged from its winter dormancy. You can also harvest individual leaves as needed by cutting them off just above the base of the plant with scissors or pinch them off using your fingers.
Harvesting Methods
There are two primary methods to harvest chives:
Pinching Off Individual Leaves
This is the most common method and requires minimal effort. Simply pinch off the top sets of leaves on the stem, leaving about 1 inch of stem intact. This will encourage new growth from the lower parts of the plant.
Cutting the Entire Plant
If you want to harvest a larger quantity or plan on using the stems in cooking, cut the entire plant back to about an inch above the soil level. This will allow the plant to regrow and can be done in mid-to-late summer when it is at its peak height.
